One Pan Balsamic Chicken & Veggies

This is a great meal for when I forget to defrost chicken and have some veggies in the fridge that are probably on their way out.
Ingredients:
  • 1-2 medium red onions
  • 2 lbs red potatoes
  • 1-2 heads of broccoli
  • 2 cloves garlic
  • 1 TBSP Mrs. Dash seasoning
  • 1 TBSP olive oil
  • 3 TBSP balsamic vinegar
  • 8-10 chicken tenderloins
Directions:
  1. Cut onions, potatoes, and broccoli into bite-sized pieces. 
  2. Coat vegetables in olive oil and sprinkle with Mrs. Dash and garlic.
  3. Spray pan with cooking spray and lay froze or thawed chicken breast tenderloins.
  4. Pour seasoned vegetables over chicken.
  5. Drizzle balsamic vinegar over chicken & veggies.
  6. Cook at 375 degrees for 40 min. (thawed chicken), 50-55 min. (frozen chicken). Turning partway through.

Tips:
  • Cover pan with foil or baking paper, the balsamic tends to bake onto the pan.
  • You can sprinkle a little more seasoning when you're turning the chicken partway through baking.
  • Optional veggies to add: zucchini, mushrooms, bell pepper, matchstick carrots, sweet potatoes.
